Just solid burgers

Equipment
- 1 large bowl
- 1 kitchen scale (optional)
- wax paper (optional)
- 1 burger press (optional)
- 1 aluminum tray (roughly 9×13", to hold the raw patties)
Ingredients
Patties
- 3 lb ground beef
- 3 large eggs
- 3 tbsp Worcestershire sauce
- 3 tsp garlic powder
- 3 tsp onion powder
- 3 tsp salt
- 3 tsp pepper
- 1 oz cheddar cheese (or ¼ cup if already shredded)
Toppings
- 12 hamburger buns
- 12 slices cheese
- 36 pickle chips
- 3 beefsteak tomatoes
- 1 head lettuce
- ketchup
Instructions
Form the patties
- Put the ground beef into a large bowl3 lb ground beef
- Crack the eggs on top
- Pour the Worcestershire over everything3 large eggs, 3 tbsp Worcestershire sauce
- Sprinkle the dry spices over everything3 tsp garlic powder, 3 tsp onion powder, 3 tsp salt, 3 tsp pepper
- Shred the cheese on top of it all1 oz cheddar cheese
- Mix it all thoroughly together with your hands
- Get your kitchen scale and
- Tear off roughly 4 oz (¼ lb) pieces of the mixture and form into 12 balls
- Press them into patties by hand, or with a burger press, to about ¾" thickness
- Put them in the fridge to rest for an hour or two
Prep
- Slice the tomatoes, discarding the ends, into 12 slices3 beefsteak tomatoes
- Tear off 12 pieces of the lettuce1 head lettuce
- Get the ketchup and pickles and put together and assembly station
Cook the patties
- Heat up the grill or one ore more skillets on the stovetop to about 400ºF, which should correspond to medium-high heat on both.Using something like an infrared thermometer to check can help.
- Cook the patties for about 4 minutes on the first side
- Flip them over with the spatula
- Keeping in mind the next step, cook them another 3-6 minutes, until they're cooked to your liking, but at least until the juices from the patty run clear (as opposed to pink) when pressed:* rare: 6-8 min total, 130-135ºF center* medium: 10-12 min total, 140-150ºF center, patty slightly springy when pressed* well-done: 14-16 min total, 160ºF center, patty will be firm
- For cheeseburgers, cover the patties with sliced cheese for the last minute or so12 slices cheese
Assemble the burgers
- Remove the patties from the heat to an aluminum tray and let them cool for like 5 minutes
- While they're cooling, put the buns face down on the grill so they toast a little bit12 hamburger buns
- Place each patty on a bottom bun
- Assemble the top buns, repeating for each one:a. Top bun, with its top downb. Ketchupc. Three (3) pickle chipsd. Tomato slicee. Lettuce piece36 pickle chips, ketchup
- Attach the bottoms to the tops and serve
