Egg Roll in a Bowl

Equipment

  • 1 quite a large saucepan
  • 1 wooden spoon

Ingredients

  • 1 lb ground meat (turkey, pork, beef all work)
  • 14 oz coleslaw vegetable mix (or just shredded cabbage)
  • 1 egg
  • ¼ cup low sodium soy sauce
  • 1 green onion
  • 1 tbsp sesame oil
  • 2 tsp sriracha
  • 1 tsp ground ginger
  • 1 garlic clove (or 1 tsp minced garlic)

Instructions

Prep

  • Mince the garlic clove. You should have about 1 tsp minced garlic after.

  • Turn a stove top on medium and put the skillet on it to heat up a bit
  • Slice the green onion. It should yield about 2 tbsp.

Cook

  • Add the beef and cook until it's no longer pink

  • Add the minced garlic and stir it around with the wooden spoon for 30 seconds
  • Stir in the cabbage, soy sauce, and ginger

  • Cook until the cabbage is as soft as you want it. Add a little water if need be.
  • Turn the stove top heat down to low
  • Make a hole in the middle of the skillet and crack the egg into it

  • Let it cook a bit and scramble it with the wooden spoon
  • Stir in the sriracha
    2 tsp sriracha
  • Drizzle the sesame oil on top

  • Add the sliced green onion

  • Transfer to one or more bowls and serve
