Better known by its Spanish name, Ropa Vieja is a hearty stew with shredded beef

- 1 large slow cooker (4 qt or larger)
Ingredients
- 3 lbs beef flank steak
- 2 bell peppers (orange and green)
- 1 cup Spanish olives
- 1 small white onion
- 1 cup beef broth
- 1 can petite diced tomatoes (14 oz)
- 1 can tomato paste (6 oz)
- 1 tbsp apple cider vinegar
- 1-½ tsp salt
- 3 garlic cloves
- 1 tsp oregano
- 1 tsp cumin
- ½ tsp turmeric
- ¼ tsp pepper
Instructions
- Dice the orange and green bell peppers2 bell peppers
- Dice the small white onion1 small white onion
- Peel the 3 whole garlic cloves3 garlic cloves
- Add to the slow cooker: 1 cup of beef broth, 1 can of tomato paste, 1 can of diced tomatoes, 1 tbsp apple cider vinegar, 1-½ tsp salt, 1 tsp oregano, 1 tsp cumin, ½ tsp turmeric, ¼ tsp pepper1 cup beef broth, 1 can petite diced tomatoes, 1 can tomato paste, 1 tbsp apple cider vinegar, 1-½ tsp salt, 1 tsp oregano, 1 tsp cumin, ½ tsp turmeric, ¼ tsp pepper
- Stir the mixture
- Put the flank steak in and toss it in the mixture to coat3 lbs beef flank steak
- Add the diced bell peppers, diced white onion, 1 cup of olives, and 3 whole garlic cloves2 bell peppers, 1 cup Spanish olives, 1 small white onion, 3 garlic cloves
- Cover and cook on high for 5 hours. Don't open the lid that whole time.
- Shred the meat with 2 forks in the slow cooker
- Serve by itself or with a side dish
