Ropa Vieja

Better known by its Spanish name, Ropa Vieja is a hearty stew with shredded beef

Equipment

Ingredients

  • 3 lbs beef flank steak
  • 2 bell peppers (orange and green)
  • 1 cup Spanish olives
  • 1 small white onion
  • 1 cup beef broth
  • 1 can petite diced tomatoes (14 oz)
  • 1 can tomato paste (6 oz)
  • 1 tbsp apple cider vinegar
  • 1-½ tsp salt
  • 3 garlic cloves
  • 1 tsp oregano
  • 1 tsp cumin
  • ½ tsp turmeric
  • ¼ tsp pepper

Instructions

  • Dice the orange and green bell peppers

  • Dice the small white onion

  • Peel the 3 whole garlic cloves

  • Add to the slow cooker: 1 cup of beef broth, 1 can of tomato paste, 1 can of diced tomatoes, 1 tbsp apple cider vinegar, 1-½ tsp salt, 1 tsp oregano, 1 tsp cumin, ½ tsp turmeric, ¼ tsp pepper

  • Stir the mixture
  • Put the flank steak in and toss it in the mixture to coat

  • Add the diced bell peppers, diced white onion, 1 cup of olives, and 3 whole garlic cloves

  • Cover and cook on high for 5 hours. Don't open the lid that whole time.
  • Shred the meat with 2 forks in the slow cooker
  • Serve by itself or with a side dish
