A tart side dish

Equipment
- 1 mixing bowl
- 1 slotted spoon
- 1 cutting board
- 1 peeler
Ingredients
- 1 large cucumber
- ⅔ cup white vinegar
- ⅓ cup water
- 1 tsp salt
Instructions
- Peel cucumber
- On the cutting board, cut and discard ends
- Chop into chunks. One way to do this is to cut the cucumber into thick rounds, about ½" each, and then each round into quarters.
- Move chunks into the mixing bowl
- Toss the chunks with the 1 tsp of salt
- Add the ⅓ cup of water and ⅔ cup of white vinegar
- Mix well and vigorously (to separate some of the seeds) with the slotted spoon
- Let it marinate for 5 to 30 minutes
- Scoop up with the slotted spoon into serving dish
