Equipment

  • 1 mixing bowl
  • 1 slotted spoon
  • 1 cutting board
  • 1 peeler

Ingredients

  • 1 large cucumber
  • ⅔ cup white vinegar
  • ⅓ cup water
  • 1 tsp salt

Instructions

  • Peel cucumber
  • On the cutting board, cut and discard ends
  • Chop into chunks.
    One way to do this is to cut the cucumber into thick rounds, about ½" each, and then each round into quarters.
  • Move chunks into the mixing bowl
  • Toss the chunks with the 1 tsp of salt
  • Add the ⅓ cup of water and ⅔ cup of white vinegar
  • Mix well and vigorously (to separate some of the seeds) with the slotted spoon
  • Let it marinate for 5 to 30 minutes
  • Scoop up with the slotted spoon into serving dish
