A simple, fairly healthy snack or side dish
Servings: 2 people
Equipment
- baking sheet
- paring knife (possibly)
- cutting board (possibly)
- aluminum foil (optional)
Ingredients
- a bunch green vegetables (green beans, zucchini, broccoli, asparagus, etc)
- a little oil (olive is nice; spray, if possible)
- salt
- pepper
- some garlic powder (optional)
- some shredded Parmesan cheese (optional)
Instructions
- Preheat oven to 425°F
- Optionally, line the baking sheet with the aluminium foil, to make cleanup easier
- Spray, brush, or drizzle the bottom with oil
- If the vegetable needs it, do the prep work (trim green beans of the tops and tails, slice zucchini into coins, cut the woody ends off asparagus) on the cutting board
- Fill the sheet with as many vegetables as you want
- Spray, brush, or drizzle the vegetables with oil
- Sprinkle with salt to taste, but probably cover them fairly well
- Sprinkle with pepper to taste, maybe a little less than the salt
- Optionally, sprinkle with garlic powder to taste, about the same as the pepper
- Toss the veggies so they get evenly coated with the spices
- Arrange them into a single layer
- Put the sheet in the lower part of the oven
- Bake for about 10 minutes, until they're as tender as you'd like
- For green beans and asparagus, shake the sheet so they roll over and put them in for another 5 minutes
- Remove from oven
- Optionally, sprinkle with the grated Parmesan
