A simple, healthy side dish
Equipment
- 1 medium pot (4 qt)
- 1 colander
Ingredients
- 12 oz dried black beans (the fresher, the better)
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp cayenne/chili powder
- 1 tsp olive oil
- 1 tbsp lime juice
- 6 cups water
Instructions
- Put the medium pot on the stove and turn the heat on high
- Add the water6 cups water
- Put the colander in the sink and put the beans in it12 oz dried black beans
- Rinse the beans and remove any not-beans you may find, such as small rocks or debris
- Transfer the beans to the pot
- Add the salt, oil, lime juice, powders, and any other seasonings you want to the pot1 tsp salt, 1 tsp garlic powder, 1 tsp cayenne/chili powder, 1 tsp olive oil
- Let the water come to a boil
- Reduce the heat to about medium, such that the water is gently simmering
- Cook the beans for 1 hour
- Carefully (because they'll be hot) eat a bean or two to see if they're tender enough. If not, check again every 10 minutes, until they are. Add more water if need be, to keep the beans swimming in it.
- Turn the heat on high again, to boil away the water and thicken the bean sauce
- Once most of the water has boiled, turn the stove off
- Add the lime juice1 tbsp lime juice
- Serve the beans
